1992-1996

In 1992 I moved to Cliveden in Buckinghamshire, one of the best hotels in the country where I started as a commis chef in sauces and veg section in the star rated Waldos restaurant. After 6 months I went on become a sous chef in the main kitchen – and so I learn more about how to manage a kitchen and its budget.
